Özet
Bu çalışma Starks Gold kiraz çeşidinin hasat sonrası kalitesi üzerine UV-C, Ultrason ve modifiye atmosfer paket (MAP) uygulamalarının etkilerini belirlemek için yürütülmüştür. Bu amaçla meyvelere UV-C (15 W, 10 dk), Ultrason (35 kHz, 10 dk, 20 °C) ve MAP uygulanmıştır. Uygulama sonrası meyveler depoya (0 °C, %85-90 nem) alınmış ve 4, 8, 12 ve 16. gündeki kalite değişimleri incelenmiştir. Deneme süresince %1.15 (4. Gün MAP) ile %10.54 (16.gün, Kontrol) arasında ağırlık kaybı, %3.63 (4. gün, MAP) - % 3.98 (16. gün, Kontrol) titre edilebilir asitlik, %15.73 (12. gün, MAP) - %18.47 (4. gün, MAP) suda çözünür kuru madde miktarı, %14.81 (4. gün, Kontrol) - %47.28 (16. gün, MAP) arasında hasat sonrası kayıplar tespit edilmiştir. Deneme süresince yapılan renk ölçümlerinde 40.83 (4.gün, MAP) ile 57.37 (12.gün UV-C) arasında L* değeri, 10.21 (12. gün, UV-C) - 26.49 (8. Gün, UV-C) a değeri, 12.39 (4.gün, MAP) - 25.13 (12. Gün, UV-C) b değeri, 20.85 (4. gün, UV-C) - 31.07 (8.gün, UV-C) Kroma değeri, 31.18 (8.gün, UV-C) ile 67.50 (12. Gün, UV-C) arasında hue değerleri tespit edilmiştir. Bu çalışmada; Starks Gold çeşidinin hasat sonrası kalitesinin korunması için MAP, UV-C ve Ultrason uygulamalarının tek başına yetersiz olduğu görülmüş, uygulamalardan biri tercih edilmek istenirse MAP’ ın kullanılabileceği belirlenmiştir. Farklı çalışmalarla konunun detaylandırılmasına ihtiyaç duyulmaktadır.
This study was carried out to determine the effects of UV-C, Ultrasound and modified atmosphere packaging (MAP) applications on postharvest quality of Starks Gold cherry (Prunus avium L.) variety. For this purpose UV-C (15 W, 10 min), ultrasound (35 kHz, 10 min, 20 °C) and MAP were applied to fruit. After the application, fruit was taken to the store (0 °C, 85-90% humidity) and quality changes on 4, 8, 12 and 16 days were examined. During the storage between 1.15% (4th days, MAP) and 10.54% (Day 16, Control) weight lossses 3.63% (4th day, MAP) and 3.98% (Day 16, Control) titratable acidity values 15.73% (Day 12, MAP) and 18.47% (4th day, MAP) soluble solid contents 14.81% (Day 4, Control) and 47.28% (16th day, MAP) postharvest losses had been determined. For color measurements during the trial, from 40.83 (day 4, MAP) to 57.37 (day 12 UVC) L * values, 10.21 (day 12, UV-C) - 26.49 (Day 8, UV-C) a, 12.39 (Day 4, MAP) - 25.13 (Day 12, UV-C) b, 20.85 (day 4, UV-C) - 31.07 (day 8, UV-C) Chroma and between 31.18 (Day 8, UV-C) and 67.50 (Day 12, UV-C) hue values were determined. In this study it was seen that for the postharvest protection of the quality of Starks Gold, MAP, UV-C and Ultrasound applications were insufficient and MAP was more prominent if one of the applications was preferred. There was a need to elaborate on the subject with different studies.
