dc.description.abstractGastronomi alanının yoğun rekabete dayanan, emek yoğun bir hizmet sektörü olması, gastronomi eğitimi veren kurumların sektörün ihtiyaçlarına uygun nitelikli personel yetiştirmelerini gerektirmektedir. Söz konusu eğitim kurumlarından mezun olan nitelikli öğrencilerin, sektörün potansiyel temsilcileri olacağı düşünüldüğünde sektörde istihdamını ve uzun yıllar çalışmasını sağlamak için, sektör ile ilgili algı ve tutumlarını incelemek önemli görünmektedir. Bu nedenle araştırmanın amacı, lisans düzeyinde eğitim alan "gastronomi ve mutfak sanatları" bölümü öğrencilerinin sektörde çalışmaya yönelik bakış açılarını belirlemektir. Bu amaç doğrultusunda yapılan araştırmada anket tekniği kullanılmış ve Abant İzzet Baysal Üniversitesi Bolu Turizm İşletmeciliği ve Otelcilik Yüksekokulu Gastronomi ve Mutfak Sanatları bölümünde okuyan 104 öğrenciye ulaşılmıştır. Demografik değişkenlere ve öğrencilerin sektöre yönelik bakış açılarına ilişkin verilerin yorumlanmasında frekans ve yüzde analizinden yararlanılmıştır. Öğrencilerin sektörde çalışmaya yönelik bakış açıları; işin doğası ve çalışma koşulları, sosyal statü ve gelecek kaygısı, ücret ve olanaklar ve son olarak da kişisel görüşler olmak üzere dört farklı boyutta incelenmiş ve değerlendirilmiştir. Elde edilen bu veriler öğrencilerin beklentilerini farklı bakış açıları ile göstermekte ve aynı zamanda sektör temsilcilerine mevcut sorunların çözümü hususunda da yol göstereceği düşünülmektediren_US
dc.description.abstractThe fact that the gastronomy field is a labor-intensive service sector based on intense competition requires institutions that provide gastronomy education to raise qualified staff to meet the needs of the industry. It is important to examine the perceptions and attitudes of the sector in order to ensure employment and long years of employment in the sector when it is considered that the qualified students graduated from the educational institutions are potential representatives of the sector. For this reason, the aim of the research is to determine the perspective of the students of the department of "gastronomy and culinary arts" who are trained at undergraduate level. For this purpose, a questionnaire was used in the research and 104 students attending Abant İzzet Baysal University in the department of Gastronomy and Culinary Arts were reached. Frequency and percentage analysis were used in interpreting data on demographic variables and students' perspectives on the sector. The perspectives of the students towards working in the sector have been examined in four dimensions such as nature and working conditions of work, social status and future anxiety factor, fees and facilities, personal opinions. The obtained data show the expectations of the students of the gastronomy and culinary arts sector with different perspectives and at the same time lead the sector representatives to solve the existing problems.en_US
