Citric acid is one of the commercially important chemicals produced by fermentation. It is widely used in food, beverage, pharmaceutical, chemical, tobacco, and other industries. Recently, there has been a great interest in the use of Yarrowia lipolytica strains for citric acid production. In this study, growth and citric acid production kinetics of a novel domestic strain, Y. lipolytica 57, were investigated. Experiments were carried out in a batch system by using a fermentation medium containing glucose as substrate. Effects of initial medium pH, and temperature on fermentation kinetics were investigated between 4.2 and 8.5, and 20–35°C, respectively. Specific growth rates, citric acid productivities, and citric acid yields were calculated. Specific growth rates and maximum specific citric acid productivities were expressed as functions of pH and temperature by using non-linear regression analysis.
