Öğe Bioactive components and market quality of apple (malus x domestica borkh.) fruits could be effectively controlled by trees pretreatment with boric acid, melatonin and gibberellic acid(Parlar Scientific Publications (P S P), 2018) Okatan, Volkan; Bulduk, İbrahim; Sekara, Agnieszka; Çolak, Ayşen Melda; Kaki, Barış; Gündoğdu, MüttalipApple is the fourth most important fruit, known and valued around the world. The numerous potential health benefits are reffeed to apple regular consumption. Many factors affect the phytochemical profile of apples, some of them can be applied for optimalisation of the health benefits of apples. The aim of this investigation was the characterisation of the effect of application of boric acid, melatonin, and gibberellic acid on 'Amasya' and 'Granny Smith' apples morphological and biochemical features. Apple trees were sprayed with boric acid at concentrations of 50 and 75 ppm, gibberellic acid (50 and 75 ppm) and melatonin (50 and 75 ppm), than the physical attributes and chemical composition of fruits was investigated. All treatments significantly increased total soluble solids and phenols content in friuits as well as organic acids except for malic acid. Malic acid was determined as 9316-2439 mg/100 ml, total flavonoids 704-302, while total antioxidant activity 65.02 to 3.97 % DPPH.The observed differences in composition presented a significant magnitude that they may affect both nutritional and sensory properties. The most important for consumers aples charcateristics, like sweetness, can be effetively modified by boric acid, gibberellic acid or melatonin treatment in the manner decribed, but exact mechanisms by which these are accomplished are largely unknown.Öğe Bioactive contents and some horticultural characteristics of local apple genotypes from Turkey(Pakistan Agricultural Scientists Forum, 2018) Gündoğdu, Müttalip; Canan, İhsan; Okatan, VolkanSome horticultural characteristics and bioactive contents of some local apple genotypes grown in Bolu province located in western black sea region were investigated. Along with the horticultural characteristics (fruit weight, width etc.), the phenolic spectrum and organic acids as bioactive content were determined. Among major phenolic compounds, catechin, chlorgenic acid, gallic acid, phloridzin and rutine content varied between 10.84- 5.16 mg 100 ml(-1); 25.16-7.17 mg 100 ml(-1); 7.35- 1.42 mg 100 ml(-1); 6.12-1.18 mg 100 ml(-1) and 5.16-1.01 mg 100 ml(-1), respectively. The dominant organic acids were malic acid and fumaric acid among the organic acids. When the apple genotypes were evaluated overall in terms of horticultural properties and bioctive contents; it is suggested that 14BL02, 14BL09, 14BL06 and 14BL01 genotypes displayed superior properties and they may create a significant genetic resource to be use them in breeding activities in apple in future.Öğe The comparison of antioxidant compounds and mineral content in some pomegranate (punica granatum l.) genotypes grown in the east of Turkey(Wydawnictwo Akad Rolniczej W Lublinie, 2018) Okatan, Volkan; Çolak, Ayşen Melda; Güçlü, Sultan Filiz; Gündoğdu, MüttalipIn recent times, pomegranate has been one of Turkey's most important commercial fruit crops for consumption and export. In this study, the chemical composition of pomegranate (Punica granatum L.) fruits grown in the central area of Bitlis province (Eastern Turkey) was investigated. For this purpose, total phenolic content, ascorbic acid content, total anthocyanin and antioxidant activity and minerals content were evaluated. The highest total phenolic contents were determined in 13BIT1 (6477.78 mg gallic acid equivalents 100 g(-1) fresh matter). The highest ascorbic acid was determined in 13BIT2 of pomegranate genotype (60.78 mg 100 g(-1)). Radical scavenging activity (DPPH) were determined between 13BIT18 (78.15) to 13BIT1 (31.49). Total anthocyanin of genotypes was measured between 13BIT19 (156.03) to 13 BIT17 (55.37), respectively. The highest mineral compositions of the pomegranate genotypes were 998.00% N, 301.00 mg 100 g(-1) P, 1708.61 mg 100 g(-1) K, 55.21 mg 100 g(-1) Ca, 116.79 mg 100 g(-1) Mg, 5.1 mg 100 g(-1) Fe, 1.91 mg 100 g(-1) Cu, 0.41 mg 100 g(-1) Mn and 1.20 mg 100 g(-1) Zn, respectively. The results indicate that pomegranate genotypes have an important value of health and nutrition for the human.Öğe Frenküzümü (Ribes spp.) Çeşitlerinin Fenolik İçerikleri(2017) Okatan, Volkan; Gündoğdu, Müttalip; Güçlü, Sultan Filiz; Çelikay, Ayşegül; Çolak, Ayşen Melda; Korkmaz, Nazan; Polat, MehmetBu çalışmanın amacı Türkiye'de yetiştirilen farklı frenküzümü çeşitlerinin rutin, protocatechuic, catechin, p- hydroxy benzoic, chlorogenic, caffeic, kuersetin, luteolin, kamferol, p-coumaric, vanilin ve ferulic asit içeriklerinin belirlenmesidir. Kırmızı ve siyah frenküzümü çeşitleri (Goliath, Red Lake, Rovada, Rosenthal, and Booskop Giant) ters fazlı yüksek performanslı sıvı kromatografisi kullanılarak fenolik asit içeriklerini belirlemek için analizleri yapılmıştır. Sonuçlar p-coumaric asitin (1.66-0.04 ?g g-1) frenküzümü çeşitlerinde baskın fenolik asit olduğunu göstermiştir. Principle component analysis was also performed to assess the variations in and relationships between bioactive compounds contents of cultivars treated with GA(3). Although they varied depending on cultivars, the highest organic acid contents were generally determined in fruits treated with 50 ppm GA3. Both GA(3) treatments increased vitamin C contents in 'Albion' and 'Aromas' but decreased in 'Seascape' fruits. GA treatment caused significant change in some phenolic compounds content. While 100 ppm GA(3) treatment significantly increased catechin content of 'Albion' and 'Aromas', it decreased catechin content of 'Seascape' fruits. Results of PCA analysis showed that 'Sweet Ann' differ from other cultivars by poor ascorbic and fumaric acid content. Bölgede yetişen 15 alıç genotipinden meyve örneği alınmış ve genotiplerde fiziksel özellikler olarak; meyve eni ve boyu, meyve ağırlığı, çekirdek sayısı ve çekirdek ağırlığı tespit edilmiştir. Genotiplerin biyokimyasl içerikleri olarak ise; suda çözünür kuru madde (SÇKM), pH, asitlik, toplam fenolik madde, antioksidant kapasitesi (DPPH) ve toplam antosiyanin içerikleri incelenmiştir. İncelenen genotiplerde meyve ağırlığı 0.96-4.03 g, meyve boyu 10.48-17.43 mm, meyve eni 12.5319.94 mm, arasında tespit edilmiştir. Toplam fenolik madde miktarı 960,00-3626.00 mg GA/g ta arasında, toplam antosiyanin madde miktarı ise 2.38-6.12 µg siy-3-glk/g ve antioksidant kapasitesi (DPPH) ise 19.24-59.24 % olarak belirlenmiştir
